Spicy Black Bean Soup

1 Tbs. olive oil
1 medium onion chopped
2 garlic cloves, chopped
2 tsp chili powder
1 tsp cumin
¼ tsp red pepper
2 can black beans, rinsed and drained
2 cups water
1 can vegetable broth
1 Tbs. cilantro
In a 3 qt. saucepan, heat oil over medium heat. Add onion and cook, stirring occasionally, until tender, 5-8 minutes. Stir in garlic, chili powder, cumin, and pepper; cook 30 seconds. Stir in beans, water, and broth; heat to boiling over high heat. Reduce heat and simmer 15 minutes. Sprinkle with cilantro and serve.
